Laksa Paste

Ingredients

6-8long red chillies (dried)
8purple shallots (coarsely chopped)
5candlenut / macadamia
3cm piecegalangal (coarsely chopped)
2stemslemon grass (coarsely chopped)
2tbspeanut oil
1 1/2tspfinely grated fresh turmeric
1tspshrimp paste
1clovegarlic (coarsely chopped)
2tbsdried shrimp (ground)
1tspvietnamese mint
2tbskaffir lime rind
1tbscoriander seeds (ground)

Instructions

  • Place the dried chilies in a heatproof bowl. Cover with boiling water and set aside for 20 minutes to soften. Drain and chop them coarsely.

  • Place all the ingredients except the shrimp paste into a mortar and pestle and pound it into a paste. Add the shrimp paste and pound it some more.
