A classic Thai curry. Ingredients Quantity Measure Ingredient 2 tbsp coriander seeds (roasted and ground) 2 tsp cumin seeds (roasted and ground) 1⁄4 tsp nutmeg (grated) 1 1⁄2 tsp cinnamon (ground) 1⁄2 tsp cloves (ground) 1⁄2 cup shallots (finely chopped) 1⁄4 cup garlic (finely chopped) 1⁄3 cup lemongrass (stalk, bottom part only, finely sliced) 4 slices galangal 1 tbsp coriander root or stalks (chopped) 1 tsp kaffir lime rind (sliced) 1 tsp white pepper (ground) 10-15 whole red chilies (dry, large, roasted, seeded & chopped) 2 tsp sea salt 2 tsp shrimp paste 1⁄2 tsp cardamom (ground) Instructions Pound it out in a mortar and pestle.
